How do I read articles and pages offline using Safari 5.1?

Pocket for Mac was recently released, and allows for offline reading. You can download it from the Mac App Store for free: https://itunes.apple.com/us/app/pocket/id568494494?mt=12

You can now download pocket from the Mac App Store. It will download the articles you've saved while you are online and it allows access to offline reading on the app...

Hello ! OS X 10.7 is requiered to get the app, but my Mac is too old to handle it. How can I use pocket on safari offline ? Thx.

It is unfortunately not possible to access Pocket offline in Safari. If you are unable to install Pocket for Mac, you can access what you have saved offline if you install Firefox along with the Pocket for Firefox extension: https://addons.mozilla.org/en-US/firefox/addon/read-it-later/
